Soya Shepherd’s Pie Recipes

Ingredients

  • 50gms soya granules, soaked and squeezed
  • 1 tbsp oil
  • 5-6 garlic cloves, chopped
  • 1 medium onion, chopped
  • ½ cup tomato puree
  • White pepper powder to taste
  • Salt to taste
  • ½ tsp fresh thyme, chopped
  • 3tbsp green peas, boiled
  • Black pepper powder to taste
  • 2tbsp butter
  • 2 medium potatoes, mashed
  • 2tbsp cream
  • Salt to taste
  • Pinch of nutmeg powder
  • 1/2 tsp fresh parsley, chopped

Method

  1. Preheat oven on grill mode at 180 ºC.

  2. For the granules, heat oil in a pan and sauté garlic and onion till soft.

  3. Add tomato puree, white pepper powder, salt and thyme.

  4. Add soya granules and green peas. Mix well.

  5. Reduce heat and cook uncovered until moisture evaporates.

  6. Add parsley and black pepper powder and stir and cook for half a minute.

  7. Remove from heat. Set aside.

  8. In another pan melt butter.

  9. Add mashed potatoes and cream and mix well.

  10. Add salt, white pepper powder and nutmeg powder.

  11. Remove from heat and allow it cool to room temperature.

  12. Put the potato mixture into a piping bag with star nozzle.

  13. In a ceramic/ glass baking tray, layer the soya mixture and pipe it over with creamy mashed potatoes.

  14. Bake in a preheated oven under a hot grill for 18-20 minutes or until the tops are golden brown.

  15. Garnish with parsley and serve hot.

For the Salad

  1. Place all salad ingredients in a large bowl.

  2. Add the toasted soya.

  3. Add dressing to the above and toss well.

  4. Place the salad on a plate

  5. Garnish with basil sprig and serve immediately.
