Chilli Corn Soya Recipes

Ingredients

  • For the sour cream
  • 1 cup hung yogurt
  • ¼ cup cream
  • 1 ½ tsp lemon juice
  • 1 tbsp parsley, finely chopped
  • 1 tsp black pepper, freshly ground
  • Salt to taste

  • For serving
  • 2 tbsp sour cream
  • 200 gms plain nachos
  • For the chilli con
  • 1 tbsp oil
  • ½ tbsp cumin seeds, ground and roasted
  • ½ tbsp coriander, ground and roasted
  • 1 tsp chilli powder, optional
  • 2 onions, finely chopped
  • 2-3 garlic cloves, crushed
  • 1 cup nutrela soya granules, soaked in stock/water and squeezed
  • 1 ½ cups rajma (red kidney beans), cooked, drained, and rinsed
  • 2 cups tomatoes, diced
  • 1 cup tomato puree
  • 1 cup veg stock
  • 2 spring onion greens, finely chopped
  • 2 tbsp jalapeno chillies, drained and chopped roughly
  • 3 medium chillies, chopped roughly

Method

For the sour cream

  1. Place the hung yogurt and cream in a mixing bowl.

  2. Using a fork or a whisk, blend the yogurt and cream into a smooth mixture. Make sure there are no lumps.

  3. Add the lemon juice, chopped parsley, pepper and salt and mix well.Taste and adjust as required.

  4. Keep aside.

For the chilli con

  1. Heat oil in a non­-stick frying pan over medium ­high heat.

  2. Add ground cumin, ground coriander and chilli powder and cook stirring for 1 minute.

  3. Add onion and garlic and cook for 2 minutes or until onion softens.

  4. Add soya granules and kidney beans and salt. Sauté, stirring with a wooden spoon, for 5 minutes or until soya changes colour.

  5. Add diced tomato, tomato puree, vegetarian stock and stir well.

  6. Reduce heat to medium and simmer, stirring occasionally, for 10 minutes or until mixture thickens.

  7. Taste and adjust seasoning

  8. Remove from heat and stir in spring onion greens, jalapeños and chilli.

For serving

  1. Spoon chilli con soya into bowls.

  2. Top with sour cream.

  3. Serve immediately with the nachos and sour cream.
